Born and raised in the culinary epicenter of San Sebastián, the city with the highest concentration of Michelin stars per capita in the world, Bruno Oteiza absorbed the discipline, respect for ingredient, and Basque culinary philosophy from childhood, and started his career in the world renowned kitchens of Arzak and Akelarre. The culinary excellence of the region of Guipuzkoa, the enchanting vibe of the pintxo bars, the txakoli vineyards, the Atlantic coast, all became the foundation of an extraordinary palate that would be later perfected in his French culinary education and vibrant experience in Mexico.

For over two decades, Oteiza transplanted his Basque excellence into a fiery vibrance on the plates of Mexico City's most coveted restaurant. At Biko, alongside Mikel Alonso, he pioneered 'Mestizo' cuisine, an audacious fusion of Basque technique with Mexican soul. The restaurant earned a coveted place among The World's 50 Best Restaurants, rewriting the rules of what cross-cultural gastronomy could achieve.
